Cold-pressed olive oil is the name of the method that ensures the beneficial vitamins and minerals contained in olives are converted into oil with minimal loss. Oil extracted using the cold-pressing technique is obtained by pressing olives harvested during the early harvest period, specifically between October and November, at temperatures below 20-24 degrees Celsius using a technique called “cold pressing.” The health component “polyphenol” is found in high concentrations in olives harvested early in the season. The cold pressing technique preserves this health component and transfers it to the oil. When early harvest and cold pressing techniques are combined, the resulting oil becomes a veritable health elixir.
Olive oil produced for daily consumption at more affordable prices is made by heating the olive paste to 38 degrees. While this method allows for more oil to be extracted, it also causes a significant loss of beneficial minerals and vitamins in the olive oil. In the cold-pressing method, these valuable contents are preserved, but the oil yield decreases. For this reason, early harvest cold-pressed olive oils are “priceless,” rare, and have a unique flavor with their aroma.
For olive oil to be considered cold-pressed olive oil, the temperature of the water used during production must not exceed 25 degrees Celsius. The lower the temperature and the faster the pressing, the higher the quality of the oil.
Cold-pressed olive oil made from early harvest olives is considered the best. With its aroma and beneficial components, cold-pressed olive oil is considered a “health elixir.” You can consume it for medicinal purposes by taking a spoonful every day. Cold-pressed olive oil, which is recommended to be consumed cold to preserve its content, can be used especially by dipping bread in it with various spices at breakfast, adding it to salads that accompany your meals at every meal, and using it in the preparation of cold olive oil dishes.
Cold-pressed olive oil dissolves in the intestines rather than the stomach, like other oils, and soothes the digestive system due to its low acid content.
